- 12 oz spaghetti or linguine
- 3 cups cooked shredded chicken
- 1/4 cup unsalted butter
- 1 tbsp olive oil
- 8 oz mushrooms sliced
- 1 small onion finely chopped
- 2 cloves garlic minced
- 1/4 cup all-purpose flour
- 2 cups chicken broth
- 1 cup half and half
- 2 tbsp lemon juice
- 2 cups shredded mozzarella cheese
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp chopped parsley
Cook pasta until al dente. Drain.
Sauté mushrooms, onions, and garlic in butter and oil.
Stir in flour, then gradually whisk in broth and half and half. Simmer.
Add lemon juice, salt, pepper.
Toss in chicken and pasta. Combine well.
