Ingredients
  

  • 12 oz spaghetti or linguine
  • 3 cups cooked shredded chicken
  • 1/4 cup unsalted butter
  • 1 tbsp olive oil
  • 8 oz mushrooms sliced
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup half and half
  • 2 tbsp lemon juice
  • 2 cups shredded mozzarella cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp chopped parsley

Instructions
 

  • Cook pasta until al dente. Drain.
  • Sauté mushrooms, onions, and garlic in butter and oil.
  • Stir in flour, then gradually whisk in broth and half and half. Simmer.
  • Add lemon juice, salt, pepper.
  • Toss in chicken and pasta. Combine well.
