- 3 large russet potatoes sliced 1/8 inch thick
- 2 tablespoons butter
- 1 small onion minced
- 4 cloves garlic minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup heavy cream
- 1 cup chicken stock
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded fontina or provolone cheese
- 1/4 cup grated parmesan cheese
- Fresh parsley chopped (for garnish)
Preheat oven to 425°F.
Sauté onion in butter until softened.
Add garlic, salt, and pepper.
Stir in cream and stock; let simmer.
Add sliced potatoes and simmer 15–20 minutes.
