Ingredients
  

  • 3 large russet potatoes sliced 1/8 inch thick
  • 2 tablespoons butter
  • 1 small onion minced
  • 4 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream
  • 1 cup chicken stock
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded fontina or provolone cheese
  • 1/4 cup grated parmesan cheese
  • Fresh parsley chopped (for garnish)

Instructions
 

  • Preheat oven to 425°F.
  • Sauté onion in butter until softened.
  • Add garlic, salt, and pepper.
  • Stir in cream and stock; let simmer.
  • Add sliced potatoes and simmer 15–20 minutes.

Notes

  • You can swap the cheese blend depending on preference—Gruyère works well.
  • Use a mandoline for even potato slices.
