How to Make Cheesy Chicken Foldover

Step 1: Preheat & Prep:

Preheat oven to 400°F. Line a pizza pan with parchment paper.

Step 2: Make Cheese Base:

Combine mozzarella and cheddar.

Spread in a circle shape on the parchment to form your “crust.”

Step 3: Bake Cheese Crust:

Bake for 5 minutes or until melted and lightly golden.

Carefully drain any extra oil.

Step 4: Add Filling:

On one half of the melted cheese base, layer chicken, bell pepper, diced tomato, and green onion.

Step 5: Fold & Seal:

Fold the other half of the cheese over the filling. Press gently to seal.

Step 6: Final Bake:

Return to oven and bake for 4–5 more minutes, until edges are crispy and golden.

A baked cheese crust forms the crispy shell, stuffed with juicy chicken, fresh veggies, and gooey cheese. It's low-carb, gluten-free, and totally crave-worthy. Perfect for lunch, dinner, or even a party snack!

  • 1 1/3 cups shredded mozzarella cheese
  • 1 1/3 cups shredded cheddar cheese
  • 1 cup cooked chicken chopped or shredded
  • 1/3 cup sliced bell pepper
  • 1/3 cup diced tomato
  • 3 tablespoons chopped green onion

Instructions
 

  • Preheat the oven to 400°F and line a pizza pan with parchment paper (do not use wax paper).
  • Mix the mozzarella and cheddar cheese together, then spread into a circle on the parchment paper to form a cheese base.
  • Bake the cheese base for about 5 minutes until melted and lightly golden.
  • Remove from the oven and drain any excess oil.
