Ingredients
  

  • 1 1/3 cups shredded mozzarella cheese
  • 1 1/3 cups shredded cheddar cheese
  • 1 cup cooked chicken chopped or shredded
  • 1/3 cup sliced bell pepper
  • 1/3 cup diced tomato
  • 3 tablespoons chopped green onion

Instructions
 

  • Preheat the oven to 400°F and line a pizza pan with parchment paper (do not use wax paper).
  • Mix the mozzarella and cheddar cheese together, then spread into a circle on the parchment paper to form a cheese base.
  • Bake the cheese base for about 5 minutes until melted and lightly golden.
  • Remove from the oven and drain any excess oil.
  • Arrange the chicken over one half of the cheese base.
  • Add the bell pepper, diced tomato, and green onion on top.

Notes

• Line your pan with parchment, not wax paper—high heat can melt wax.
• Works great with leftover rotisserie chicken or pre-cooked breast.
