Ingredients
  

  • 1 ¾ to 3 –4 lb beef chuck roast
  • Kosher salt and black pepper
  • 2 tablespoons flour
  • 6 tablespoons salted butter
  • 3 yellow onions thinly sliced
  • 4 shallots halved
  • 2 cups apple cider
  • 2 cups chicken broth or dry white wine
  • 2 tablespoons chopped fresh thyme
  • 2 tablespoons apple butter
  • 1 lb small to medium potatoes
  • ¼ cup fresh sage leaves
  • 1 teaspoon garlic powder
  • Flaky sea salt

Instructions
 

  • Oven:
  • Preheat oven to 325°F.
  • Season roast with salt, pepper, rub with flour.
  • Cook onions in butter, add shallots and ½ cup cider, cook 5 mins.
  • Add thyme, roast, apple butter, remaining cider, and wine. Add potatoes.
  • Cover and roast 2½–3 hrs.
  • Increase oven to 425°F. Smash potatoes, add butter, garlic powder, sage.
