- 1 ¾ to 3 –4 lb beef chuck roast
- Kosher salt and black pepper
- 2 tablespoons flour
- 6 tablespoons salted butter
- 3 yellow onions thinly sliced
- 4 shallots halved
- 2 cups apple cider
- 2 cups chicken broth or dry white wine
- 2 tablespoons chopped fresh thyme
- 2 tablespoons apple butter
- 1 lb small to medium potatoes
- ¼ cup fresh sage leaves
- 1 teaspoon garlic powder
- Flaky sea salt
Oven:
Preheat oven to 325°F.
Season roast with salt, pepper, rub with flour.
Cook onions in butter, add shallots and ½ cup cider, cook 5 mins.
Add thyme, roast, apple butter, remaining cider, and wine. Add potatoes.
Cover and roast 2½–3 hrs.
Increase oven to 425°F. Smash potatoes, add butter, garlic powder, sage.
