Ingredients
  

  • 2 slices of bread ciabatta, sourdough, or preferred choice
  • ½ ripe avocado
  • 2 hard-boiled eggs chopped
  • 1 tablespoon mayonnaise
  • 1 tablespoon finely diced red onion
  • ¼ teaspoon paprika
  • ¼ teaspoon garlic salt
  • Black pepper to taste
  • Sriracha to taste
  • 2 slices cooked bacon crumbled
  • Fresh dill for garnish optional

Instructions
 

  • In a bowl, mix chopped eggs, mayonnaise, red onion, paprika, garlic salt, black pepper, and sriracha.
  • Toast the bread slices until golden.
  • Mash ¼ of the avocado onto each slice of toast.
  • Top with the prepared egg salad.
  • Sprinkle crumbled bacon over the egg salad.

Notes
