Ingredients
  

  • 6 strips bacon
  • 4 large eggs
  • 2 tbsp milk
  • ¼ tsp black pepper
  • 8 slices cheddar cheese or 1½ cups shredded
  • 4 thick slices sourdough bread
  • 4 tbsp unsalted butter softened

Instructions
 

  • Cook bacon in a skillet until crispy. Drain on paper towels.
  • Whisk eggs, milk, and pepper.
  • Scramble gently in skillet using bacon grease.
  • Remove when soft-set.
  • Assemble sandwiches: Add cheese to all bread slices, then layer bacon and eggs onto two slices.

Notes
