- 2 small boneless skinless chicken breasts
- 2 tsp Italian seasoning
- Salt & pepper to taste
- 2 Tbsp olive oil
- 4 Tbsp butter
- 1 small yellow onion diced
- 3 cloves garlic minced
- 4 Tbsp flour
- 1½ cups chicken broth
- ¾ cup milk
- 4 oz cream cheese softened
- 1 cup cheddar cheese shredded
- 10 oz diced tomatoes & green chilies
- 8 oz thin spaghetti
- 1 cup mozzarella cheese shredded
- Red pepper flakes & parsley for garnish
Preheat oven to 400°F.
Slice and season chicken.
Sear in oil until cooked, then dice.
In the same pot, melt butter and cook onions 4 min, then garlic 1 min.
Stir in flour, cook 2 min.
Gradually add broth and milk, whisking until thick.
