Ingredients
  

  • 4 large Russet potatoes sliced into wedges
  • 4 Tbsp extra virgin olive oil
  • 2 tsp salt
  • 2 tsp garlic powder
  • 2 tsp Italian herb seasoning
  • ½ cup shredded parmesan cheese
  • 2 Tbsp chopped fresh parsley or cilantro

Instructions
 

  • Preheat oven to 375°F. Grease or line a large baking sheet.
  • Place potato wedges in a large bowl. Drizzle with oil and toss.
  • Mix salt, garlic powder, and Italian seasoning in a small bowl.
  • Toss wedges with parmesan, then with seasoning.
  • Arrange wedges skin-side down on baking sheet.
  • Bake 25–35 minutes, until golden and fork-tender.
