Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup cherry tomatoes halved
  • 1 zucchini diced
  • 1 bell pepper diced
  • 1 red onion chopped
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions
 

  • In a large skillet, heat olive oil over medium heat.
  • Season chicken with salt, pepper, and oregano.
  • Sear chicken for 5–7 minutes per side until golden and cooked through.
  • Remove and set aside.
  • In the same skillet, sauté garlic, tomatoes, zucchini, bell pepper, and onion for 5 minutes.
