Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1/2 cup BBQ sauce

For the Roasted Sweet Potatoes:

  • 2 large sweet potatoes peeled and diced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste

For the Bowl Assembly:

  • 1 cup cooked quinoa or brown rice
  • 1 cup corn kernels fresh or frozen
  • 1 red bell pepper diced
  • 1 avocado sliced
  • Fresh cilantro for garnish
  • Extra BBQ sauce for drizzling

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Rub chicken with olive oil, spices, salt, and pepper.
  • Cook on skillet or grill pan for 5–6 mins per side.
  • Brush with BBQ sauce at the end. Let rest before slicing.
  • Toss sweet potatoes with oil and seasonings.
  • Roast 25–30 mins, flipping halfway.
