- 4 boneless skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1/2 cup BBQ sauce
For the Roasted Sweet Potatoes:
- 2 large sweet potatoes peeled and diced
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
For the Bowl Assembly:
- 1 cup cooked quinoa or brown rice
- 1 cup corn kernels fresh or frozen
- 1 red bell pepper diced
- 1 avocado sliced
- Fresh cilantro for garnish
- Extra BBQ sauce for drizzling
Preheat oven to 400°F (200°C).
Rub chicken with olive oil, spices, salt, and pepper.
Cook on skillet or grill pan for 5–6 mins per side.
Brush with BBQ sauce at the end. Let rest before slicing.
Toss sweet potatoes with oil and seasonings.
Roast 25–30 mins, flipping halfway.
