- Water
- 2 Tbsp butter
- 2 Tbsp flour
- 1 cup milk 1% or any
- ⅔ cup shredded cheddar cheese
- 2 Tbsp grated Parmesan cheese
- ¼ tsp kosher salt
- Pinch ground mustard optional
- Pinch cayenne optional
Drain and cover to keep warm.
Dry the saucepan. Melt butter, whisk in flour for 1 min.
Slowly add milk while whisking. Simmer 3 min until thickened.
Lower heat. Gradually whisk in cheddar, then add Parmesan, salt, and optional spices.
