Ingredients
  

  • 1 lb broccoli florets about 6 cups
  • Water
  • 2 Tbsp butter
  • 2 Tbsp flour
  • 1 cup milk 1% or any
  • cup shredded cheddar cheese
  • 2 Tbsp grated Parmesan cheese
  • ¼ tsp kosher salt
  • Pinch ground mustard optional
  • Pinch cayenne optional

Instructions
 

  • Drain and cover to keep warm.
  • Dry the saucepan. Melt butter, whisk in flour for 1 min.
  • Slowly add milk while whisking. Simmer 3 min until thickened.
  • Lower heat. Gradually whisk in cheddar, then add Parmesan, salt, and optional spices.
