For the Brownie Crust:
- 1 box 18 oz brownie mix (plus eggs, oil, and water as instructed)
- Cooking spray or parchment paper
For the Cream Cheese Frosting:
- 8 oz cream cheese softened
- ½ cup powdered sugar
- 1 tsp vanilla extract
For the Topping:
- Assorted fresh fruits strawberries, blueberries, raspberries, kiwi, grapes, sliced
- ¼ cup apricot preserves or fruit jelly melted (optional)
- Fresh mint leaves optional
Preheat oven and prepare brownie batter per box directions.
Line or spray a pizza pan, spread brownie batter into a round or rectangle.
Bake 20–25 minutes or until a toothpick comes out clean. Cool completely.
Beat cream cheese until smooth. Add sugar and vanilla and beat until fluffy.
Spread frosting over cooled brownie, leaving a border.
Arrange sliced fruit over the top.
