- 1 medium butternut squash peeled and cubed
- 2 tbsp olive oil
- Salt and pepper to taste
- 12 oz pasta penne or rigatoni
- 1 lb Italian sausage casings removed
- 1 small onion diced
- 3 cloves garlic minced
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach
- 1/4 tsp ground nutmeg optional
Roast squash at 400°F for 25–30 minutes until tender.
Cook pasta until al dente; reserve pasta water.
Brown sausage in skillet, remove and set aside.
Sauté onion and garlic, then add roasted squash and cream.
Blend sauce until smooth and return to pan.
