Ingredients
  

  • lbs small new potatoes
  • 1 Tbsp salt for boiling water
  • 2 Tbsp unsalted butter melted
  • 2 Tbsp extra virgin olive oil
  • 1 tsp kosher salt or to taste
  • ½ tsp freshly ground black pepper or to taste
  • 2 Tbsp finely chopped parsley optional garnish

Instructions
 

  • Halve or quarter larger ones to make all pieces similar in size.
  • Place in a large pot with 1 Tbsp salt and enough water to cover by 1 inch.
  • Bring to a boil, then simmer 10–18 minutes until fork-tender.
  • Drain and return potatoes to pot or large bowl.

Notes

  • For extra flavor, add 1–2 smashed garlic cloves to the boiling water.
  • You can use baby gold or baby red potatoes for variety.
