- 1½ lbs small new potatoes
- 1 Tbsp salt for boiling water
- 2 Tbsp unsalted butter melted
- 2 Tbsp extra virgin olive oil
- 1 tsp kosher salt or to taste
- ½ tsp freshly ground black pepper or to taste
- 2 Tbsp finely chopped parsley optional garnish
Halve or quarter larger ones to make all pieces similar in size.
Place in a large pot with 1 Tbsp salt and enough water to cover by 1 inch.
Bring to a boil, then simmer 10–18 minutes until fork-tender.
Drain and return potatoes to pot or large bowl.
