Caramel and Strawberries:
- ⅓ cup 70g granulated sugar
- 2 tsp water
- 12 –14 small to medium strawberries
- Small cup of ice water
Toasts:
- 4 slices rustic country bread
- 4 tbsp unsalted butter
- 3 tbsp granulated sugar
- 1 large chunk good quality brie
- Fresh nutmeg for grating
Wash and stem strawberries. Prepare a cup of ice water.
In a small pot, heat sugar and water over medium heat until amber caramel forms.
Dip each strawberry into the caramel, then into the ice water to harden. Set aside.
In a skillet, melt butter and sugar.
Coat both sides of bread slices and cook until caramelized and golden.
