Ingredients
  

Caramel and Strawberries:

  • cup 70g granulated sugar
  • 2 tsp water
  • 12 –14 small to medium strawberries
  • Small cup of ice water

Toasts:

  • 4 slices rustic country bread
  • 4 tbsp unsalted butter
  • 3 tbsp granulated sugar
  • 1 large chunk good quality brie
  • Fresh nutmeg for grating

Instructions
 

  • Wash and stem strawberries. Prepare a cup of ice water.
  • In a small pot, heat sugar and water over medium heat until amber caramel forms.
  • Dip each strawberry into the caramel, then into the ice water to harden. Set aside.
  • In a skillet, melt butter and sugar.
  • Coat both sides of bread slices and cook until caramelized and golden.

Notes

  • Use ripe but firm strawberries for the best dipping texture.
  • If caramel hardens in the pot, reheat gently until smooth.
