Ingredients
  

  • 2 tbsp butter
  • ¾ cup chopped onion
  • ¾ cup chopped celery
  • 2 cups cauliflower rice
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded sharp cheddar
  • 4 oz canned green chiles drained
  • ½ cup full-fat sour cream
  • ½ cup heavy cream
  • tsp salt
  • ½ tsp black pepper
  • ½ tsp granulated garlic

Instructions
 

  • Preheat oven to 325°F (160°C). Grease an 8×8-inch baking dish.
  • Cook cauliflower rice (3–4 mins), then squeeze dry using paper towels. Set aside.
  • Melt butter in a skillet over medium-high heat.
  • Add onion and celery, sauté 5–7 mins.
  • Lower heat, add heavy cream, and stir until thickened and reduced by half.
  • In a large bowl, combine cauliflower rice, ½ cup of each cheese, green chiles, sour cream, veggie-cream mixture, and seasonings.

Notes

• Make it spicier by using pepper jack instead of Monterey Jack.
• Frozen cauliflower rice works too—just cook and drain well.
