Ingredients
  

  • lbs chicken breasts diced
  • 2 large eggs
  • 1/3 cup mayonnaise
  • 1/3 cup all-purpose flour or cornstarch/potato starch for GF
  • 1⅓ cups shredded mozzarella
  • Tbsp chopped fresh dill
  • ½ tsp salt
  • 1/8 tsp black pepper
  • 2 Tbsp light olive oil for frying

Garlic Aioli (Optional)

  • 1/3 cup mayonnaise
  • 1 garlic clove pressed
  • ½ Tbsp lemon juice
  • ¼ tsp salt
  • 1/8 tsp black pepper

Instructions
 

  • Dice chicken finely and combine with remaining ingredients.
  • Chill mixture for 2 hours or overnight.
  • Heat oil and cook fritters 3–4 min per side.
  • Mix aioli ingredients if using. Serve fritters warm with dip.
