Ingredients
  

  • 3 cups cottage cheese
  • 3 large eggs
  • 2 cups frozen mixed vegetables peas, carrots, corn, or your favorite blend
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 2 tsp onion powder
  • Salt and pepper to taste
  • 1 tbsp olive oil for greasing the pan

Instructions
 

  • Preheat the oven to 375°F (190°C) and grease a 9×9-inch baking dish with olive oil.
  • In a large bowl, whisk together the cottage cheese and eggs until smooth and well combined.
  • Stir in the frozen mixed vegetables, shredded cheddar cheese, garlic powder, onion powder, salt, and pepper.
  • Pour the mixture into the prepared dish and spread evenly.
  • Bake for 30–35 minutes or until golden and fully set.
