Cherry Vareniki (Ukrainian Dumplings)

These traditional Ukrainian cherry vareniki are sweet, juicy dumplings filled with ripe cherries and a touch of sugar. Served warm with a sprinkle of sugar and a dollop of sour cream, they’re a nostalgic, comforting treat perfect for summer or holidays.

- Vareniky Dough
- 1 lb pitted cherries
- 1/2 cup sugar 1/4 tsp per dough round
- 1/2 Tbsp salt for the water
Cut 2–3 inch dough rounds. Add 1/4 tsp sugar and a few cherries.
Fold and seal edges tightly.
For pelmeni, use smaller rounds, 1 cherry, 1/8 tsp sugar, and fold into “diaper” shape.
Place shaped vareniki on a floured board until ready to cook.
Boil water with 1/2 Tbsp salt.
Cook dumplings in batches.

Frozen cherries can be used when fresh ones are out of season—just thaw and drain first.

Vareniki can be made ahead and frozen raw on a tray, then transferred to a bag for long-term storage. Boil from frozen, adding 1–2 extra minutes to the cooking time.
