For the Chicken Burgers
- 1½ lb ground chicken meat preferably thighs
- 2 scallions chopped
- 1 cup shredded cheese cheddar, gouda, or provolone
- ¼ cup mayonnaise
- ½ tsp salt
- ½ tsp pepper
For the Avocado Corn Salsa
- 1 large avocado sliced
- 1 ear of corn husked
- ⅛ cup chopped fresh cilantro
- ½ tbsp olive oil
- Salt and pepper to taste
- Juice of ½ lime
In a bowl, mix chicken, cheese, scallions, mayo, salt, and pepper.
Form into patties using ½ cup mixture each.
Grill patties for 5 minutes on each side until cooked through.
Slice kernels from corn and mix with avocado, cilantro, oil, lime juice, salt, and pepper.
Serve salsa over grilled chicken burgers.
