Ingredients
  

For the Salad:

  • 6 oz bacon about 6 slices, chopped and browned
  • 5 cups romaine lettuce chopped
  • 2 cooked chicken breasts sliced
  • 2 hard-boiled eggs peeled and quartered
  • 1 large avocado sliced
  • 1 cup cherry tomatoes halved
  • ½ cup red onion thinly sliced
  • ½ cup crumbled blue cheese or feta
  • 2 tbsp chopped fresh parsley

For the Dressing:

  • 3 tbsp balsamic vinegar
  • 1 tbsp Dijon mustard
  • 1 garlic clove minced
  • cup extra virgin olive oil
  • ¼ tsp salt
  • tsp black pepper

Instructions
 

  • Cook bacon until crispy. Boil eggs, cool, and quarter.
  • Rinse and dry romaine lettuce. Arrange on platter.
  • Top with chicken, eggs, avocado, tomatoes, onion, cheese, and bacon.
  • Sprinkle with parsley.
  • In a jar, combine dressing ingredients and shake until blended.
  • Drizzle over salad or serve dressing on the side.

Notes

  • For quicker prep, use store-bought rotisserie chicken and pre-cooked eggs.
