For the Salad:
- 6 oz bacon about 6 slices, chopped and browned
- 5 cups romaine lettuce chopped
- 2 cooked chicken breasts sliced
- 2 hard-boiled eggs peeled and quartered
- 1 large avocado sliced
- 1 cup cherry tomatoes halved
- ½ cup red onion thinly sliced
- ½ cup crumbled blue cheese or feta
- 2 tbsp chopped fresh parsley
For the Dressing:
- 3 tbsp balsamic vinegar
- 1 tbsp Dijon mustard
- 1 garlic clove minced
- ⅓ cup extra virgin olive oil
- ¼ tsp salt
- ⅛ tsp black pepper
Cook bacon until crispy. Boil eggs, cool, and quarter.
Rinse and dry romaine lettuce. Arrange on platter.
Top with chicken, eggs, avocado, tomatoes, onion, cheese, and bacon.
Sprinkle with parsley.
In a jar, combine dressing ingredients and shake until blended.
Drizzle over salad or serve dressing on the side.
