Ingredients
  

  • 2 tablespoons olive oil
  • 2 chicken breasts about 1 lb total
  • 1 egg
  • 1 cup panko breadcrumbs
  • ½ cup freshly grated Parmesan cheese
  • 1 teaspoon dried oregano
  • ½ teaspoon garlic powder
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 cup marinara sauce
  • cups shredded mozzarella
  • 2 tablespoons minced parsley optional, for garnish

Instructions
 

  • Preheat oven to 400°F. Line a baking sheet with foil and brush with oil.
  • Halve and pound chicken to even thickness.
  • Pat dry and season with salt and pepper.
  • Dip into egg, then breadcrumb-Parmesan-spice mixture.
  • Place on baking sheet and bake until golden and cooked through.
  • Flip, top with marinara and mozzarella.

Notes

  • Make-Ahead: Bread the chicken and refrigerate, covered, up to 4 hours ahead; bake just before serving.
  • Breadcrumb Swap: For extra flavor, use Italian-style breadcrumbs or mix in 1 Tbsp chopped fresh basil.
