- 2 tablespoons olive oil
- 2 chicken breasts about 1 lb total
- 1 egg
- 1 cup panko breadcrumbs
- ½ cup freshly grated Parmesan cheese
- 1 teaspoon dried oregano
- ½ teaspoon garlic powder
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- 1 cup marinara sauce
- 1½ cups shredded mozzarella
- 2 tablespoons minced parsley optional, for garnish
Preheat oven to 400°F. Line a baking sheet with foil and brush with oil.
Halve and pound chicken to even thickness.
Pat dry and season with salt and pepper.
Dip into egg, then breadcrumb-Parmesan-spice mixture.
Place on baking sheet and bake until golden and cooked through.
Flip, top with marinara and mozzarella.
