Ingredients
  

  • 1 1/2 lbs chicken breasts 4 medium
  • 1/2 cup all-purpose flour
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 2 large eggs beaten
  • 1/2 cup plain bread crumbs
  • 1/3 cup parmesan cheese finely grated
  • 3 Tbsp extra light olive oil
  • 2 cups marinara sauce
  • 6 oz mozzarella cheese divided (1 1/2 cups shredded)
  • 6 fresh basil leaves finely chopped

Instructions
 

  • Season chicken with salt and pepper, then stuff each breast with 2–3 tablespoons of mozzarella.
  • Set up breading station: flour in one bowl, eggs in another, and breadcrumbs mixed with parmesan in a third.
