Salad Ingredients:
- 2 cups cauliflower chopped
- 2 cups broccoli chopped
- 1 cup red cabbage chopped
- 1 cup carrots chopped
- 1½ cups parsley chopped
- 2 celery stalks chopped
- ½ cup raw almonds chopped
- ½ cup raw sunflower seeds
- ⅓ cup organic raisins
For the Vinaigrette:
- 3 Tbsp olive oil
- ½ cup lemon juice
- 1 Tbsp fresh grated ginger
- 2 Tbsp clover honey
- ½ tsp sea salt
Finely chop all veggies using a sharp knife or food processor.
Combine salad ingredients in a large bowl.
Mix vinaigrette ingredients in a jar or whisk in a bowl.
Toss salad with vinaigrette. Chill 30–60 mins before serving.
