Ingredients
  

  • 4 organic boneless skinless chicken breasts 6 oz each
  • Zest and juice of 1 lime plus 1 lime cut into wedges
  • 1 tablespoon olive oil
  • 1/2 cup fresh cilantro divided
  • 2 cloves garlic minced
  • 1 teaspoon kosher salt
  • Black pepper to taste

Instructions
 

  • Pound the thick end of each chicken breast so it’s even with the thinner end.
  • In a container or freezer bag, mix lime juice, zest, olive oil, 1/4 cup chopped cilantro, garlic, salt, and pepper.
  • Add chicken and coat both sides.
  • Marinate in the fridge at least 1 hour, or overnight, turning halfway.
