Meatloaf Ingredients
- 2 lbs ground beef 85–80% lean
- 1 medium onion finely chopped
- 1 tsp olive oil
- 2 large eggs
- 3 garlic cloves minced
- 2 tbsp ketchup
- 3 tbsp fresh parsley chopped
- ¾ cup Panko breadcrumbs
- ⅓ cup milk
- 1 tsp salt
- 1 tsp Italian seasoning
- ½ tsp ground black pepper
Glaze Ingredients
- ¾ cup ketchup
- 1½ tsp white vinegar
- 2 tbsp brown sugar
- ½ tsp garlic powder
- ½ tsp onion powder
Preheat oven to 350°F. Line baking sheet with foil or parchment.
Sauté onions in olive oil for 5–7 mins until golden. Cool slightly.
Mix meatloaf ingredients in a large bowl until just combined.
Shape into a loaf and bake uncovered for 40 minutes.
Combine glaze ingredients.
Spread on meatloaf and bake 20 more minutes until internal temp hits 160°F.
