For the Tart:
- 1 pie crust store-bought or half a homemade recipe
- 1/2 lb bacon chopped
- 1/2 yellow onion diced
- 1 cup shredded cheese sharp white cheddar or Gruyère
- 1 3/4 cup half and half
- 4 large eggs
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1/4 tsp smoked paprika
- 1/8 tsp ground nutmeg
- 1 Tbsp parsley or chives optional, for garnish
Preheat oven to 350˚F. Prepare and roll out pie crust into a tart or pie pan.
Freeze 30 min.
Blind bake the crust: prick, line with parchment, fill with weights, and bake 35–40 min.
Remove weights and brush with egg white.
Cook chopped bacon until crisp.
Remove and sauté onion in bacon fat. Set both aside.
