Ingredients
  

For the Tart:

  • 1 pie crust store-bought or half a homemade recipe
  • 1/2 lb bacon chopped
  • 1/2 yellow onion diced
  • 1 cup shredded cheese sharp white cheddar or Gruyère
  • 1 3/4 cup half and half
  • 4 large eggs
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/4 tsp smoked paprika
  • 1/8 tsp ground nutmeg
  • 1 Tbsp parsley or chives optional, for garnish

For Brushing the Crust:

  • 1 egg white

Instructions
 

  • Preheat oven to 350˚F. Prepare and roll out pie crust into a tart or pie pan.
  • Freeze 30 min.
  • Blind bake the crust: prick, line with parchment, fill with weights, and bake 35–40 min.
  • Remove weights and brush with egg white.
  • Cook chopped bacon until crisp.
  • Remove and sauté onion in bacon fat. Set both aside.

Notes

  • For extra flavor, swap cheddar with Gruyère or Emmental.
