For the Filling:
- 2 tablespoons oil or butter
- 1 pound ground lamb or beef
- 1 cup onion diced
- 1 cup carrot diced
- 2 cloves garlic chopped
- 2 tablespoons tomato paste
- 2 tablespoons all-purpose flour gluten-free if needed
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce gluten-free if needed
- 1 teaspoon rosemary chopped (or ½ teaspoon dried)
- 1 teaspoon thyme chopped (or ½ teaspoon dried)
- 2 bay leaves optional
- 1 cup peas
- Salt and pepper to taste
For the Topping:
- 4 cups hot mashed potatoes
Heat oil in a skillet over medium-high heat.
Add ground lamb and cook until browned, about 7–10 minutes.
Drain excess fat, keeping 2 tablespoons in the pan.
Add onion and carrot. Sauté for 5–7 minutes until tender.
Stir in garlic and tomato paste. Cook for 1 minute.
Sprinkle in flour, then stir.
Add broth, Worcestershire sauce, rosemary, thyme, and bay leaves.
