- 6 Roma tomatoes diced
- 1 bell pepper any color, seeded and diced
- 1 medium onion finely diced
- 2 jalapeños seeded and finely diced
- 1 avocado peeled, pitted, diced
- 15 oz can corn drained
- 15 oz can black beans rinsed and drained
- 1/2 bunch cilantro about 1/2 cup, chopped
- 3 –4 Tbsp lime juice
- 1/2 cup light Italian dressing
- 4 garlic cloves pressed
- 1 tsp sea salt or to taste
In a large bowl, combine all chopped vegetables, beans, corn, and cilantro.
Stir in lime juice, Italian dressing, garlic, and salt.
Gently mix and adjust seasoning to taste.
Serve immediately or chill for 30–60 minutes for best flavor.
