- 1 tablespoon olive oil
- 6 boneless skinless chicken thighs or breasts cut into bite-sized pieces
- 4 bell peppers sliced (mix colors)
- 1 small onion sliced
- 1 recipe or packet fajita seasoning or taco seasoning
- 1 cup sour cream
- 4 oz cream cheese softened
- 2 cups grated cheddar cheese
- Optional: avocado guacamole, salsa, sour cream for topping
Preheat oven to 350°F. Sauté chicken in olive oil over medium heat until fully cooked.
Remove and set aside.
Add peppers and onions to the same skillet. Cook until tender-crisp.
Return chicken to pan. Add seasoning, sour cream, and cream cheese.
Stir until smooth and coated.
Transfer to a baking dish. Sprinkle with cheddar cheese.
Bake for 10–15 minutes, or until cheese is melted.
