Ingredients
  

  • 1 tablespoon olive oil
  • 6 boneless skinless chicken thighs or breasts cut into bite-sized pieces
  • 4 bell peppers sliced (mix colors)
  • 1 small onion sliced
  • 1 recipe or packet fajita seasoning or taco seasoning
  • 1 cup sour cream
  • 4 oz cream cheese softened
  • 2 cups grated cheddar cheese
  • Optional: avocado guacamole, salsa, sour cream for topping

Instructions
 

  • Preheat oven to 350°F. Sauté chicken in olive oil over medium heat until fully cooked.
  • Remove and set aside.
  • Add peppers and onions to the same skillet. Cook until tender-crisp.
  • Return chicken to pan. Add seasoning, sour cream, and cream cheese.
  • Stir until smooth and coated.
  • Transfer to a baking dish. Sprinkle with cheddar cheese.
  • Bake for 10–15 minutes, or until cheese is melted.
