Ingredients
  

  • 2 15-ounce cans sweet corn, drained
  • 1 15-ounce can black beans, drained
  • 1 10-ounce can Rotel, drained
  • 1 bell pepper diced (red, green, or yellow)
  • 1 cup shredded cheddar cheese
  • 1 9.25-ounce bag Fritos

Dressing

  • cup sour cream
  • 1 Tablespoon extra virgin olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon ground cumin

Instructions
 

  • In a small bowl, combine all dressing ingredients. Whisk until smooth.
  • In a large bowl, combine corn, beans, Rotel, bell pepper, and cheese.
  • Pour the dressing over the salad and mix gently.
  • Just before serving, fold in Fritos to keep them crispy.
  • Serve immediately with extra toppings if desired.

Notes

  • Make Ahead: The salad can be prepped a few hours in advance, but add the Fritos just before serving to keep them crunchy.
