- 2 15-ounce cans sweet corn, drained
- 1 15-ounce can black beans, drained
- 1 10-ounce can Rotel, drained
- 1 bell pepper diced (red, green, or yellow)
- 1 cup shredded cheddar cheese
- 1 9.25-ounce bag Fritos
Dressing
- ⅔ cup sour cream
- 1 Tablespoon extra virgin olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon ground cumin
In a small bowl, combine all dressing ingredients. Whisk until smooth.
In a large bowl, combine corn, beans, Rotel, bell pepper, and cheese.
Pour the dressing over the salad and mix gently.
Just before serving, fold in Fritos to keep them crispy.
