Ingredients
  

For the squash:

  • 1 medium spaghetti squash
  • 2 tablespoons olive oil
  • Salt and pepper to taste

For the sauce:

  • 1 tablespoon olive oil
  • 4 garlic cloves minced
  • 4 cups chopped baby spinach
  • ½ cup heavy cream
  • ½ cup freshly grated parmesan cheese plus ½ cup more for topping
  • ¼ cup cream cheese
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper

Instructions
 

  • Preheat oven to 400°F. Line a baking sheet with parchment paper.
  • Slice spaghetti squash in half lengthwise and scoop out seeds.
  • Drizzle with olive oil, season with salt and pepper.
  • Place cut-side down and roast for 40 minutes.
  • While roasting, heat olive oil in a pan and sauté garlic for 30 seconds.
