For the squash:
- 1 medium spaghetti squash
- 2 tablespoons olive oil
- Salt and pepper to taste
For the sauce:
- 1 tablespoon olive oil
- 4 garlic cloves minced
- 4 cups chopped baby spinach
- ½ cup heavy cream
- ½ cup freshly grated parmesan cheese plus ½ cup more for topping
- ¼ cup cream cheese
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
Preheat oven to 400°F. Line a baking sheet with parchment paper.
Slice spaghetti squash in half lengthwise and scoop out seeds.
Drizzle with olive oil, season with salt and pepper.
Place cut-side down and roast for 40 minutes.
While roasting, heat olive oil in a pan and sauté garlic for 30 seconds.
Add spinach and cook until wilted.
