- 8 ounces bucatini or preferred pasta
- 1 pound Italian sausage remove casings
- 1 tablespoon olive oil
- ½ medium onion chopped
- 1 medium red bell pepper chopped
- 1 medium yellow bell pepper chopped
- 1 tablespoon butter
- 2 –3 cloves garlic minced
- 1 teaspoon flour
- 1 cup heavy/whipping cream
- ½ teaspoon Dijon mustard
- 2 cups packed baby spinach
- Salt & pepper to taste
- Freshly grated Parmesan cheese optional
Cook Pasta: In a large pot of salted boiling water, cook bucatini until al dente.
Reserve 2–3 tablespoons pasta water, then drain and set aside.
Brown Sausage: Heat olive oil in a large skillet over medium-high heat.
Add sausage, breaking it into pieces.
Cook until browned and no longer pink, about 8–10 minutes. Transfer to a bowl.
