Ingredients
  

  • 8 ounces bucatini or preferred pasta
  • 1 pound Italian sausage remove casings
  • 1 tablespoon olive oil
  • ½ medium onion chopped
  • 1 medium red bell pepper chopped
  • 1 medium yellow bell pepper chopped
  • 1 tablespoon butter
  • 2 –3 cloves garlic minced
  • 1 teaspoon flour
  • 1 cup heavy/whipping cream
  • ½ teaspoon Dijon mustard
  • 2 cups packed baby spinach
  • Salt & pepper to taste
  • Freshly grated Parmesan cheese optional

Instructions
 

  • Cook Pasta: In a large pot of salted boiling water, cook bucatini until al dente.
  • Reserve 2–3 tablespoons pasta water, then drain and set aside.
  • Brown Sausage: Heat olive oil in a large skillet over medium-high heat.
  • Add sausage, breaking it into pieces.
  • Cook until browned and no longer pink, about 8–10 minutes. Transfer to a bowl.
  • Sauté Vegetables: In the same skillet, add chopped onion and bell peppers.
