Dressing:
- 1/4 cup natural peanut butter
- 3 Tbsp liquid honey or vegan substitute
- 2 cloves garlic minced
- 1 Tbsp grated fresh ginger
- Pinch of sea salt
- 2 Tbsp soy sauce
- 2 Tbsp rice vinegar
- 2 Tbsp lime juice
- 4 tsp vegetable oil
- 1 tsp sesame oil
- Dash of sriracha
Slaw:
- 1 small green cabbage shredded
- 1/2 small red cabbage shredded
- 3 large carrots peeled and shredded
- 1/4 cup green onions chopped
- 1/4 cup peanuts chopped
Whisk together all dressing ingredients until smooth.
In a large bowl, combine shredded cabbage and carrots.
Pour dressing over slaw and toss to coat.
Garnish with green onions and peanuts. Serve fresh.
