- 4 chicken breasts 6 oz each, sliced
- Salt and pepper to taste
- ½ tsp Italian seasoning
- 1 Tbsp all-purpose flour
- 1 Tbsp olive oil
- 1 Tbsp butter
- ¼ cup chicken broth
- 1 tsp Dijon mustard
- ½ cup chopped yellow onions
- 1½ cups heavy cream
- ½ cup grated parmesan cheese
- 2 cups baby spinach
- ½ cup sun-dried tomatoes thinly sliced
- 1 Tbsp fresh basil optional
Slice and season the chicken with salt, pepper, Italian seasoning, and flour.
Sear in oil and butter, 3-4 minutes per side. Remove and set aside.
Deglaze pan with broth and mustard. Add onions and simmer 1 min.
Add cream and parmesan; stir until smooth.
Stir in spinach and sun-dried tomatoes.
Return chicken to the pan and simmer 2 minutes.
