Ingredients
  

  • 4 chicken breasts 6 oz each, sliced
  • Salt and pepper to taste
  • ½ tsp Italian seasoning
  • 1 Tbsp all-purpose flour
  • 1 Tbsp olive oil
  • 1 Tbsp butter
  • ¼ cup chicken broth
  • 1 tsp Dijon mustard
  • ½ cup chopped yellow onions
  • cups heavy cream
  • ½ cup grated parmesan cheese
  • 2 cups baby spinach
  • ½ cup sun-dried tomatoes thinly sliced
  • 1 Tbsp fresh basil optional

Instructions
 

  • Slice and season the chicken with salt, pepper, Italian seasoning, and flour.
  • Sear in oil and butter, 3-4 minutes per side. Remove and set aside.
  • Deglaze pan with broth and mustard. Add onions and simmer 1 min.
  • Add cream and parmesan; stir until smooth.
  • Stir in spinach and sun-dried tomatoes.
  • Return chicken to the pan and simmer 2 minutes.
