- 1 lb ground beef
- 1/2 yellow onion diced
- 2 garlic cloves minced
- 1 packet taco seasoning
- 1 15 oz can black beans, drained
- 1 15 oz can kidney beans, drained
- 1 15 oz can corn, drained
- 1 8 oz can tomato sauce
- 1 10 oz can diced tomatoes with green chilies (like Rotel)
- 2 cups beef broth
- Salt and pepper to taste
Brown ground beef in a soup pot.
Add onion and garlic; cook until soft.
Stir in taco seasoning, tomato sauce, beans, corn, tomatoes, and broth.
Simmer 10–15 minutes.
Season to taste and serve with toppings.
