- 2 cups cooked jasmine rice preferably day-old
- 2 large eggs
- 2 medium tomatoes diced
- ½ tsp salt plus more to taste
- ½ tsp sugar
- 2 –3 green onions sliced (optional)
- 2 tbsp oil for cooking
Dice tomatoes and slice green onions (if using).
Whisk eggs in a bowl.
Heat 1 tbsp oil in a pan over medium heat.
Scramble eggs until just set. Remove and set aside.
Add a little more oil.
