This Garlic Chicken and Rice is a flavorful one-pot wonder made in the Instant Pot. Loaded with tender chicken, sweet carrots, and aromatic garlic, it’s finished with parmesan and parsley for a cozy, comforting meal.

For the Base:
- 2 Tbsp olive oil
- 2 Tbsp unsalted butter
- 1 medium onion diced
- 2 large carrots thickly grated or julienned
- 1½ lbs boneless skinless chicken breast or thighs or tenders, cut into 1-inch pieces
- 2 tsp sea salt divided
- ¼ tsp black pepper ground
- 4 cups low sodium chicken broth
- 2 cups Jasmine rice unrinsed
- 1 head garlic unpeeled and halved crosswise
To Finish:
- ⅓ cup parsley finely chopped (plus more to garnish)
- ½ cup shredded parmesan cheese plus more to serve
Set Instant Pot to sauté (high heat).
Add butter, oil, onion, carrots, and 1 tsp salt. Cook for 5 minutes.
Add chicken, 1 tsp salt, and pepper.
Cook 5 more minutes, stirring occasionally.
Stir in broth and rice. Place garlic halves cut-side down on top.
