This Garlic Chicken and Rice is a flavorful one-pot wonder made in the Instant Pot. Loaded with tender chicken, sweet carrots, and aromatic garlic, it’s finished with parmesan and parsley for a cozy, comforting meal.

Ingredients
  

For the Base:

  • 2 Tbsp olive oil
  • 2 Tbsp unsalted butter
  • 1 medium onion diced
  • 2 large carrots thickly grated or julienned
  • lbs boneless skinless chicken breast or thighs or tenders, cut into 1-inch pieces
  • 2 tsp sea salt divided
  • ¼ tsp black pepper ground
  • 4 cups low sodium chicken broth
  • 2 cups Jasmine rice unrinsed
  • 1 head garlic unpeeled and halved crosswise

To Finish:

  • cup parsley finely chopped (plus more to garnish)
  • ½ cup shredded parmesan cheese plus more to serve

Instructions
 

  • Set Instant Pot to sauté (high heat).
  • Add butter, oil, onion, carrots, and 1 tsp salt. Cook for 5 minutes.
  • Add chicken, 1 tsp salt, and pepper.
  • Cook 5 more minutes, stirring occasionally.
  • Stir in broth and rice. Place garlic halves cut-side down on top.

Notes

  • For even more garlicky flavor, mash the softened garlic cloves into the rice before stirring.
  • Use chicken thighs for a juicier result.
  • Leftovers reheat beautifully — add a splash of broth when reheating to keep it moist.
  • Can be made dairy-free by omitting the butter and parmesan.
