Ingredients
  

  • 4 tablespoons extra-virgin olive oil
  • 4 garlic cloves minced or pressed
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • Zest of 1 lemon
  • 2 pounds shrimp peeled and deveined (*thawed if frozen)
  • ½ cup grated Parmesan cheese
  • 2 tablespoons chopped Italian parsley for garnish

Instructions
 

  • In a large bowl, mix olive oil, garlic, oregano, basil, salt, pepper, and lemon zest.
  • Add shrimp and toss to coat.
  • Cover and marinate in the fridge for 1–3 hours.
  • Preheat oven to 400°F (200°C).
  • Toss shrimp with Parmesan and spread on a baking sheet or casserole dish.
  • Roast for about 8 minutes, or until shrimp are pink and firm.
  • Garnish with parsley and a drizzle of olive oil. Serve immediately.

Notes

Use jumbo shrimp for a meatier bite, or try peeled tiger prawns for a dramatic presentation.
You can swap in fresh herbs like thyme or rosemary if you prefer.
