- 4 tablespoons extra-virgin olive oil
- 4 garlic cloves minced or pressed
- ½ teaspoon dried oregano
- ½ teaspoon dried basil
- ½ teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
- Zest of 1 lemon
- 2 pounds shrimp peeled and deveined (*thawed if frozen)
- ½ cup grated Parmesan cheese
- 2 tablespoons chopped Italian parsley for garnish
In a large bowl, mix olive oil, garlic, oregano, basil, salt, pepper, and lemon zest.
Add shrimp and toss to coat.
Cover and marinate in the fridge for 1–3 hours.
Preheat oven to 400°F (200°C).
Toss shrimp with Parmesan and spread on a baking sheet or casserole dish.
Roast for about 8 minutes, or until shrimp are pink and firm.
Garnish with parsley and a drizzle of olive oil. Serve immediately.
