  • cup lightly salted almonds crushed
  • 4 –5 dried apricots chopped
  • 2 –3 tsp chopped parsley or basil
  • ¼ –½ cup apricot preserves
  • Honey for drizzling
  • Crackers and sliced Granny Smith apple to serve

  • Crush almonds and mix with chopped apricots and herbs.
  • Roll goat cheese in the mixture to coat all sides.
