For the Salad:
- 8 oz bowtie pasta or rotini/fusilli
- ½ English cucumber diced (2 cups)
- 10 oz cherry tomatoes halved (1½ cups)
- 1 bell pepper chopped
- ⅓ cup red onion chopped
- 1 cup crumbled feta 4 oz
- ½ cup Kalamata olives halved or chopped
- 1 Tbsp olive juice optional
- ¼ cup fresh parsley chopped
For the Dressing:
- ⅓ cup red wine vinegar
- 1 tsp dried oregano
- 3 garlic cloves minced
- 1 tsp sea salt
- ½ tsp black pepper
- ½ to ⅔ cup extra virgin olive oil
Cook pasta until al dente. Drain and rinse with cold water.
In a jar or bowl, whisk together dressing ingredients.
In a large bowl, combine pasta, vegetables, feta, olives, and parsley.
Pour dressing over the salad and toss well.
Chill for at least 30 minutes. Adjust seasoning before serving.
