Ingredients
  

  • 2 pounds boneless skinless chicken thighs, cut into chunks

  • 1 cup full-fat coconut milk
  • 2 tablespoons lime juice
  • 2 tablespoons soy sauce or fish sauce
  • tablespoons brown sugar
  • 1 teaspoon ground ginger
  • 1 tablespoon minced garlic
  • ½ teaspoon chili flakes optional

Instructions
 

  • Make peanut sauce and divide into marinade and serving portions.
  • Marinate chicken in peanut sauce for 1–8 hours.
  • Thread chicken onto skewers.
  • Broil or grill until internal temp reaches 160°F.
  • Let rest 5 minutes, then serve with reserved sauce.
