Ingredients
  

For the Skewers

  • 1 block halloumi cheese 8–10 oz, cubed
  • 1 lemon sliced
  • 1 medium red onion chopped (optional)
  • 1 cup cherry tomatoes

For the Marinade

  • 3 Tbsp olive oil
  • 2 Tbsp fresh lemon juice
  • 1 Tbsp fresh thyme or 1 tsp dried
  • 2 garlic cloves minced
  • 1 tsp honey
  • Salt and pepper to taste

Optional Garnish

  • Fresh thyme sprigs
  • Crushed red pepper flakes

Instructions
 

  • Whisk together all marinade ingredients.
  • Thread cheese, lemon, onion, and tomatoes onto skewers. Brush with marinade.
  • Grill over medium-high heat for 2–3 min per side until golden.

Notes

  • Make-Ahead: Marinate up to 2 hours ahead; keep skewers covered in the fridge and bring to room temperature before grilling.
