For the Skewers
- 1 block halloumi cheese 8–10 oz, cubed
- 1 lemon sliced
- 1 medium red onion chopped (optional)
- 1 cup cherry tomatoes
For the Marinade
- 3 Tbsp olive oil
- 2 Tbsp fresh lemon juice
- 1 Tbsp fresh thyme or 1 tsp dried
- 2 garlic cloves minced
- 1 tsp honey
- Salt and pepper to taste
Optional Garnish
- Fresh thyme sprigs
- Crushed red pepper flakes
Whisk together all marinade ingredients.
Thread cheese, lemon, onion, and tomatoes onto skewers. Brush with marinade.
Grill over medium-high heat for 2–3 min per side until golden.
Garnish and serve warm.
