Ingredients
  

For the Stir Fry:

  • 1 lb ground beef 80–20
  • 2 zucchini sliced
  • 8 oz mushrooms sliced
  • 1 carrot julienned
  • Chives or green onions for garnish

For the Sauce:

  • 3 tbsp low-sodium soy sauce or GF tamari
  • 3 tbsp BBQ sauce
  • 2 tbsp maple syrup
  • 2 garlic cloves minced
  • 1 tsp grated ginger or ¼ tsp ground
  • 1 tbsp sesame oil

Instructions
 

  • Mix all sauce ingredients and set aside.
  • Brown ground beef in skillet, then transfer to a bowl.
  • In same pan, sauté zucchini, mushrooms, and carrot for 2–3 mins.
  • Return beef to skillet. Add sauce and stir-fry for 2–3 more mins.
  • Season to taste and serve over rice or in lettuce wraps. Garnish with chives.
