For the Stir Fry:
- 1 lb ground beef 80–20
- 2 zucchini sliced
- 8 oz mushrooms sliced
- 1 carrot julienned
- Chives or green onions for garnish
For the Sauce:
- 3 tbsp low-sodium soy sauce or GF tamari
- 3 tbsp BBQ sauce
- 2 tbsp maple syrup
- 2 garlic cloves minced
- 1 tsp grated ginger or ¼ tsp ground
- 1 tbsp sesame oil
Mix all sauce ingredients and set aside.
Brown ground beef in skillet, then transfer to a bowl.
In same pan, sauté zucchini, mushrooms, and carrot for 2–3 mins.
Return beef to skillet. Add sauce and stir-fry for 2–3 more mins.
Season to taste and serve over rice or in lettuce wraps. Garnish with chives.
