Ingredients
  

  • 2 medium zucchinis cut into sticks
  • 1 medium onion chopped
  • 1 teaspoon garlic minced
  • 1 teaspoon ginger minced
  • 1 tablespoon vegetable oil
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon sesame seeds
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
 

  • Slice the zucchinis and onion as directed.
  • Heat oil in a large skillet or wok over medium-high heat.
  • Add onion and cook for 2 minutes.
  • Stir in garlic and ginger; cook for 30 seconds.
  • Add zucchini and stir-fry for 4–5 minutes.
  • Add soy sauce, sesame oil, salt, pepper, and sesame seeds.

Notes

  • Works great with yellow squash or mushrooms added in.
  • Don’t overcook the zucchini—they should stay slightly firm.
