Ingredients
  

  • 1 medium onion cut into chunks
  • 4 garlic cloves
  • 1 lb ground lamb
  • 1 lb ground beef
  • 1 tbsp dried oregano
  • 2 tsp dried marjoram
  • 2 tsp dried thyme
  • 2 tsp dried rosemary
  • 1 tsp cumin
  • 2 tsp sea salt
  • ½ tsp black pepper

Instructions
 

  • Preheat oven to 300°F and line a loaf pan with parchment.
  • Process onion and garlic in food processor until smooth.
  • Strain with towel to remove excess liquid.
  • Add meats, herbs, salt, and pepper. Blend into a paste.
  • Press mixture into loaf pan tightly.
  • Bake 45–55 minutes, or until internal temp is 165°F.

Notes

  • For the best texture, don't skip blending the meat into a fine paste.
