- 1 lb chicken breast tenders
- ½ red onion thinly sliced
- 1 cup carrots sliced into oval rounds
- 1 tbsp honey
- 1 tbsp Dijon mustard
- 1 tbsp melted butter
- 1 tbsp maple syrup
- 1 tsp chili powder
- Salt and pepper to taste
- Fresh scallions for garnish
Preheat oven to 425°F.
Arrange chicken, onion, and carrots on a sheet pan.
Mix honey, Dijon, butter, and maple syrup. Drizzle over chicken and veggies.
Season with chili powder, salt, and pepper.
Roast for 20–25 minutes until chicken is cooked and veggies are tender.
