Ingredients
  

  • 1 lb chicken breast tenders
  • ½ red onion thinly sliced
  • 1 cup carrots sliced into oval rounds
  • 1 tbsp honey
  • 1 tbsp Dijon mustard
  • 1 tbsp melted butter
  • 1 tbsp maple syrup
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fresh scallions for garnish

Instructions
 

  • Preheat oven to 425°F.
  • Arrange chicken, onion, and carrots on a sheet pan.
  • Mix honey, Dijon, butter, and maple syrup. Drizzle over chicken and veggies.
  • Season with chili powder, salt, and pepper.
  • Roast for 20–25 minutes until chicken is cooked and veggies are tender.
