- 1 tablespoon butter or coconut oil
- 2 medium onions cut into wedges
- 4 boneless pork chops blade cut preferred
- Salt and pepper to taste
- 1 cup beef stock
- 1 teaspoon Worcestershire sauce
- 1 teaspoon arrowroot or organic cornstarch or ¼ tsp glucomannan
- ⅓ cup sour cream
Sauté onions in butter. Push aside and brown pork chops.
Season with salt and pepper.
Add beef stock and Worcestershire. Scrape the bottom to deglaze.
Seal and cook on high pressure for 8 minutes.
Natural release for 5, then quick release.
Remove pork and keep warm. Simmer sauce to thicken.
