Ingredients
  

For the Cod

  • 21 oz 600 g cod fillets
  • Salt and pepper to taste

For the Cream Sauce

  • 2 Tbsp olive oil
  • 1 medium onion thinly sliced
  • 1 Tbsp grated fresh ginger
  • 2 garlic cloves crushed
  • 1.2 cups 300 ml coconut milk
  • Juice and zest of 1 large lemon

Instructions
 

  • Preheat oven to 350°F (180°C).
  • Season cod with salt and pepper. Place in baking dish.
  • In skillet, sauté onion in olive oil until soft. Add ginger and garlic.
  • Stir in coconut milk, lemon zest, and juice. Simmer 2–3 minutes.
  • Pour sauce over cod. Bake 20–25 minutes until flaky.
  • Serve warm with sauce spooned over top.
