For the Cod
- 21 oz 600 g cod fillets
- Salt and pepper to taste
For the Cream Sauce
- 2 Tbsp olive oil
- 1 medium onion thinly sliced
- 1 Tbsp grated fresh ginger
- 2 garlic cloves crushed
- 1.2 cups 300 ml coconut milk
- Juice and zest of 1 large lemon
Preheat oven to 350°F (180°C).
Season cod with salt and pepper. Place in baking dish.
In skillet, sauté onion in olive oil until soft. Add ginger and garlic.
Stir in coconut milk, lemon zest, and juice. Simmer 2–3 minutes.
Pour sauce over cod. Bake 20–25 minutes until flaky.
Serve warm with sauce spooned over top.
